Burundi Kayanza is an exceptional honey-processed coffee from the heart of Africa, sourced from smallholder farmers who deliver their cherries to the Gakenke Washing Station in the province of Kayanza. Established in 1991, this washing station serves 2,667 farmers who each own less than half a hectare of land, cultivating coffee alongside subsistence crops like bananas, beans, yams, taro, and cassava. Each farmer typically maintains only 250 coffee trees on roughly a tenth of a hectare.
This honey-processed coffee represents a rare processing experiment for Burundi, where washing stations have recently begun exploring honey processing with impressive results. Unlike traditional washed coffees, ripe cherries are pulped and immediately placed on raised beds for drying with regular turning intervals, creating a honey process similar to the classic Costa Rican method.
