Nightcap is our premium decaffeinated coffee from Mina Rica farm in Colombia, owned by Carolina Posada, a third-generation coffee producer dedicated to supporting emerging female voices in the coffee industry. This bright, flavorful decaf undergoes the innovative sugarcane decaffeination process, preserving the coffee's natural characteristics while removing 99.9% of caffeine.
The sugarcane decaffeination process is one of the cleanest, most natural methods available. Green coffee is steamed at low pressure to open the pores, then placed in a solution of water and Ethyl Acetate (EA)—a naturally-occurring compound derived from sugarcane fermentation. The solvent bonds with chlorogenic acid salts, extracting caffeine over 8 hours through multiple solution changes. Finally, the coffee is steamed again, dried, polished, and packaged, resulting in decaf that tastes remarkably close to fully-caffeinated specialty coffee.
We taste bright notes of clementine citrus, cashew nuttiness, and sweet caramel in this washed decaf coffee. The Castillo variety and careful processing at 1,750 meters elevation create a clean, balanced cup that maintains the quality characteristics Carolina's family has cultivated over three generations.
