The sugarcane decaffeination process preserves the coffee's natural flavor profile while gently removing caffeine. Green coffee undergoes low-pressure steaming to open pores, then soaks in a water and Ethyl Acetate solution—a naturally-occurring compound derived from sugarcane fermentation. Over 8 hours with multiple solution changes, the EA bonds with chlorogenic acid salts to extract caffeine. After final steaming, drying, and polishing, the result is decaf coffee that rivals fully-caffeinated offerings in flavor complexity and quality.
